Let us imagine a loaded truck leaving the ice cream plant. On arriving at its destiny, the client’s warehouse, the merchandise is unloaded; the client’s inspector reads the thermograph record and states: "- This freight has lost the refrigeration chain. I cannot accept it." – and the driver asks himself what could have happened. In fact, thanks to an instrument that records continuously the temperature within the truck or the warehouse, it is possible to determine whether the refrigeration chain has been kept. However, this control does not prevent the rejection of the whole freight, with its implied cost. One thing is the recording of the information and another very different one is at what precise moment one can get hold of that information.
